Pancakes are an all-time breakfast favorite and a staple on National Pancake Day. However, for those looking to switch up their pancake game with a healthier alternative that’s still delicious, a grain-free recipe featuring coconut flour is an excellent choice. This instructive post will guide you through creating a batch of these coconut pancakes, allowing you to celebrate Pancake Day in a way that’s both fun and nutritious.

Ingredients for Coconut Flour Pancakes

Before we start mixing and flipping, gather the ingredients you’ll need for this pancake adventure:

  • Coconut Flour: 1 cup
  • Eggs: 4 large eggs
  • Coconut Milk or Almond Milk: 1 cup
  • Melted Coconut Oil: 1/4 cup
  • Baking Powder: 1 teaspoon
  • Vanilla Extract: 1 teaspoon

Step 1: Prepare Your Batter

In a medium-sized mixing bowl, combine the coconut flour, baking powder, and salt. Whisk them together to ensure an even distribution of the dry ingredients.

In another bowl, beat the eggs and add the coconut milk, melted coconut oil, and vanilla extract. Whisk until the wet ingredients are fully combined.
